Ingredients

  • For the Cookie Dough Base:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mini semi-sweet chocolate chips
  • For the Cheesecake Filling:
  • 32 oz (four 8-oz packages) full-fat cream cheese, at room temperature
  • 1 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 cup full-fat sour cream, at room temperature
  • 1 tbsp vanilla extract
  • For the Ganache & Decoration:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Assorted mini chocolate eggs, mini cookies, and chocolate shavings for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Press the prepared cookie dough evenly into the bottom of a 9-inch springform pan. Bake for 12-15 minutes, until lightly golden. Let it cool completely.
  2. Reduce oven temperature to 325°F (160°C). In a large bowl, beat the cream cheese and sugar with an electric mixer until smooth and creamy.
  3. Add the eggs one at a time, mixing on low speed just until combined after each addition. Gently stir in the sour cream and vanilla extract.
  4. Pour the cheesecake filling over the cooled cookie dough crust. Place the springform pan in a large roasting pan and carefully pour hot water into the roasting pan to create a water bath that comes about halfway up the sides of the springform pan.
  5. Bake for 60-70 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door cracked for 1 hour.
  6. Remove from the oven and the water bath. Let it cool completely at room temperature, then cover and refrigerate for at least 6 hours, or preferably overnight.
  7. To make the ganache, heat the heavy cream until it just begins to simmer. Pour it over the chocolate chips in a heatproof bowl and let it sit for 5 minutes before stirring until smooth.
  8. Pour the slightly cooled ganache over the chilled cheesecake. Decorate with mini Easter eggs, cookies, and chocolate shavings before the ganache sets. Chill until ready to serve.
