Ingredients

  • 8 ounces (225g) good-quality feta cheese, drained and crumbled
  • 4 ounces (115g) full-fat cream cheese, softened
  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • Freshly cracked black pepper, to taste
  • Optional: 1/4 cup toasted pistachios, chopped for garnish

Instructions

  1. In the bowl of a food processor, combine the crumbled feta cheese, softened cream cheese, extra-virgin olive oil, fresh lemon juice, and minced garlic.
