Ingredients

  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (28-ounce) can crushed tomatoes
  • Salt and freshly ground black pepper to taste
  • 4-6 large eggs
  • For Garnish (optional): Fresh cilantro, sliced avocado, crumbled cotija cheese or shredded cheddar, sour cream, and sliced jalapeños.

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the chopped onion and bell pepper, and sauté for 5-7 minutes, until softened.
  2. Add the minced garlic, chili powder, cumin, and smoked paprika. Cook for another minute until fragrant, stirring constantly.
  3. Pour in the crushed tomatoes and both cans of rinsed beans. Stir everything together, bring to a simmer, and reduce the heat to low. Let it cook for 10-15 minutes, allowing the flavors to meld. Season with salt and pepper to your liking.
  4. Using the back of a spoon, create 4-6 small wells in the simmering chilli mixture.
  5. Carefully crack one egg into each well.
  6. Cover the skillet with a lid and let it cook for 5-8 minutes, or until the egg whites are set but the yolks are still runny. For firmer yolks, cook a few minutes longer.
  7. Remove from heat and top with your favorite garnishes. Serve immediately with warm tortillas or crusty bread for dipping.
