  • 1.5 lbs Yukon Gold potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tsp salt, divided
  • 1/2 tsp black pepper, divided
  • 4 (6 oz) salmon fillets, skin removed
  • 1 bunch fresh asparagus, trimmed
  • 1 tbsp olive oil
  • 1 lemon, zested and juiced
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp unsalted butter, melted
  • 2 tbsp fresh dill, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the heavy cream, broth, minced garlic, 1/2 tsp salt, and 1/4 tsp pepper. Add the thinly sliced potatoes and toss gently to coat them completely.
  3. Arrange the coated potato slices in an even layer in the prepared baking dish. Bake for 30 minutes, or until the potatoes are beginning to soften.
  4. While the potatoes are baking, prepare the salmon and asparagus. Pat the salmon fillets dry and season them with the remaining salt and pepper. In a separate bowl, toss the trimmed asparagus with olive oil and a pinch of salt.
  5. Carefully remove the dish from the oven. Arrange the salmon fillets and asparagus spears over the partially cooked potatoes. Squeeze the juice of half the lemon over the salmon and asparagus.
  6. In a small bowl, combine the panko breadcrumbs, grated Parmesan cheese, melted butter, lemon zest, and chopped dill. Mix until well combined.
  7. Sprinkle the panko mixture evenly over the entire dish, covering the salmon, asparagus, and potatoes.
  8. Return the dish to the oven and bake for another 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the breadcrumb topping is golden brown and crisp.
