Vibrant Beetroot and Red Lentil Dal

Ingredients

  • 1 cup red lentils (masoor dal), rinsed well
  • 1 medium beetroot (about 1 cup), peeled and grated
  • 1 tbsp olive oil or ghee
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp ground coriander
  • 4 cups vegetable broth or water
  • Juice of half a lemon
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat the olive oil or ghee in a large pot or Dutch oven over medium heat. Add the cumin seeds and cook until they begin to sizzle and release their aroma, about 30 seconds.
  2. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the turmeric powder and ground coriander, stirring constantly for 30 seconds to toast the spices.
  5. Add the rinsed red lentils, grated beetroot, and vegetable broth. Stir everything together and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the lentils are soft and have broken down completely. Stir occasionally to prevent sticking at the bottom.
  7. Remove from the heat. Stir in the fresh lemon juice and season generously with salt and pepper to your taste.
  8. Serve hot, garnished with a generous sprinkle of fresh cilantro. This dal is excellent with rice, quinoa, or your favorite flatbread.
