Ingredients

  • 1.5 lbs baby potatoes
  • 3 tbsp olive oil, divided
  • Salt and freshly ground black pepper, to taste
  • 1/2 large red onion, thinly sliced
  • 1/4 cup white wine vinegar
  • 1 tsp granulated sugar
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh dill, chopped

Instructions

  1. Pickle the onions: In a small, non-reactive bowl, combine the thinly sliced red onion, white wine vinegar, sugar, and a pinch of salt. Stir well and set aside for at least 30 minutes to allow the onions to soften and pickle.
  2. Prepare the potatoes: Preheat your oven to 425°F (220°C). Place the baby potatoes in a large pot, cover with cold, salted water, and bring to a boil. Cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain them thoroughly.
  3. Smash and roast: Spread the boiled potatoes on a large, parchment-lined baking sheet. Using the bottom of a heavy glass or a potato masher, gently press down on each potato until it’s ‘smashed’ to about a 1/2-inch thickness. Drizzle with 2 tablespoons of olive oil and season generously with salt and pepper.
  4. Roast for 25-30 minutes, flipping halfway through, until the edges are golden brown and wonderfully crispy.
  5. Assemble the salad: Transfer the hot, crispy potatoes to a large serving bowl. Drain the pickled red onions and add them to the bowl, along with the crumbled feta and chopped fresh dill. Drizzle with the remaining 1 tablespoon of olive oil and gently toss to combine.
  6. Serve immediately while the potatoes are still warm for the best texture and flavor.
