Spicy Gochujang Tuna Melt

Ingredients

  • 1 can (5 oz) tuna, drained well
  • 3 tbsp mayonnaise
  • 1-2 tsp gochujang (Korean chili paste), to taste
  • 1/2 tsp toasted sesame oil
  • 1 spring onion, finely chopped
  • 4 slices of thick-cut bread (sourdough or brioche work well)
  • 4 slices of provolone or cheddar cheese
  • 2 tbsp unsalted butter, softened

Instructions

  1. In a medium bowl, combine the drained tuna, mayonnaise, gochujang, toasted sesame oil, and chopped spring onion. Mix until everything is well incorporated.
  2. Lay out the four slices of bread. Spread the softened butter evenly on one side of each slice.
  3. Flip the bread so the buttered sides are facing down. On two of the slices, place a slice of cheese, then top with half of the gochujang tuna mixture. Place another slice of cheese on top of the tuna.
  4. Place the remaining two slices of bread on top, butter-side up, to complete the sandwiches.
  5. Heat a non-stick skillet or pan over medium heat. Carefully place the sandwiches in the pan and cook for 3-4 minutes per side, until the bread is golden brown and toasted, and the cheese is completely melted and gooey.
  6. Remove from the pan, slice in half diagonally, and serve immediately.
