Instructions

  1. In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Stir in the rinsed black beans, corn, cooked rice, salsa, chili powder, cumin, and oregano. Cook, stirring occasionally, until the mixture is heated through, about 5-7 minutes.   4. To assemble, lay a warm tortilla on a flat surface. Spoon about 1/2 cup of the bean mixture onto the center of the tortilla. Top with a sprinkle of shredded cheese.
  5. Fold in the sides of the tortilla, then tightly roll it up from the bottom to enclose the filling completely.
