Inspired by the Show: The Ultimate Good Food Summer Celebration Tart

With the Good Food Show Summer 2026 just around the corner (held from 18-21 June at NEC Birmingham), we’re buzzing with culinary inspiration! To celebrate, we’ve created a recipe that captures the vibrant, delicious, and hands-on spirit of the show. This Summer Celebration Tart is packed with fresh flavours and uses techniques you might see demonstrated live on stage by your favourite chefs. It’s the perfect dish to bring a taste of the festival home.

The key to a spectacular tart is sourcing the best ingredients. A trip to the Good Food Show is a fantastic opportunity to shop till you drop, discovering the finest food and drink from big brands and artisan producers all under one roof. For this recipe, look for a creamy goat’s cheese, a tangy chutney, and the freshest seasonal vegetables.

Ingredients

  • 1 sheet (approx. 320g) of ready-rolled puff pastry
  • 150g soft goat’s cheese, crumbled
  • 4 tbsp caramelised onion chutney
  • 2 courgettes, thinly sliced into ribbons using a vegetable peeler
  • 1 red onion, very thinly sliced
  • 1 tbsp olive oil
  • 1 free-range egg, beaten
  • A handful of fresh thyme leaves
  • Fresh rocket, to serve
  • Balsamic glaze, to drizzle
  • Salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 200°C (180°C Fan, Gas Mark 6). Unroll the puff pastry sheet onto a baking tray lined with parchment paper. Using a sharp knife, lightly score a 1-inch border around the edge of the pastry, being careful not to cut all the way through.
  2. Prick the inside rectangle of the pastry all over with a fork. This will stop it from rising too much. Brush the scored border with the beaten egg.
  3. Spread the caramelised onion chutney evenly over the base of the pastry, staying within the scored border. Scatter the crumbled goat’s cheese over the chutney.
  4. In a bowl, toss the courgette ribbons and sliced red onion with the olive oil, thyme leaves, salt, and pepper. Arrange the vegetable mixture beautifully over the goat’s cheese. Getting hands-on is part of the fun, just like in one of the fabulous tasting sessions at the show!

  6. Bake for 20-25 minutes, or until the pastry is golden brown and puffed up at the edges and the vegetables are tender and slightly caramelised.
  7. Once baked, let the tart cool for a few minutes on the tray. To serve, top with a handful of fresh rocket and a generous drizzle of balsamic glaze. Slice and enjoy immediately.
