One-Pot Chorizo and Mozzarella Pasta

Ingredients

  • 1 tbsp olive oil
  • 150g (5.3 oz) cooking chorizo, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 400g (14 oz) can chopped tomatoes
  • 500ml (2 cups) hot chicken or vegetable stock
  • 250g (9 oz) dried penne or fusilli pasta
  • 125g (4.5 oz) fresh mozzarella ball, torn into pieces
  • Fresh basil leaves, to garnish (optional)
  • Salt and black pepper, to taste

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the sliced chorizo and cook for 3-4 minutes until it begins to crisp and release its flavorful oils.
  2. Add the chopped onion to the pan and cook for 4-5 minutes until softened. Stir in the minced garlic and dried oregano, cooking for one more minute until fragrant.
  3. Pour in the chopped tomatoes and hot stock, stirring to combine everything. Bring the mixture to a gentle simmer.
  4. Add the uncooked pasta to the pan, pressing it down to ensure it is fully submerged in the liquid. Season with a pinch of salt and fresh black pepper.
  5. Cover the pan, reduce the heat to low, and let it simmer for 10-12 minutes, or until the pasta is cooked al dente. Be sure to stir occasionally to prevent any pasta from sticking to the bottom.
  6. Once the pasta is tender, remove the pan from the heat. Gently stir in the torn mozzarella pieces until they just begin to melt into the sauce.
