Chilled Green Soup with Marinated Feta

Ingredients

  • For the Marinated Feta:
    • 100g feta cheese, crumbled
    • 2 tbsp extra virgin olive oil
    • 1/2 tsp coriander seeds, lightly crushed
    • 1/4 tsp red chilli flakes
    • Zest of 1 lemon
  • For the Soup:
    • 1 large cucumber, peeled and roughly chopped
    • 1 ripe avocado, halved and stone removed
    • 50g fresh spinach
    • 1/2 cup fresh mint leaves
    • 1/2 cup fresh parsley
    • 1 clove garlic, minced (optional)
    • Juice of 1 lime
    • 150ml cold vegetable broth or water
    • Salt and freshly ground black pepper to taste
  • For Garnish:
    • 2 tbsp toasted pumpkin or sunflower seeds

Instructions

  1. Marinate the Feta: In a small bowl, combine the crumbled feta, olive oil, crushed coriander seeds, chilli flakes, and lemon zest. Stir gently to combine and set aside to allow the flavors to meld.
  2. Prepare the Soup Base: Scoop the flesh from the avocado and add it to a high-speed blender along with the chopped cucumber, spinach, mint, parsley, and garlic (if using).
  3. Blend Until Smooth: Pour in the lime juice and 150ml of cold vegetable broth or water. Secure the lid and blend on high speed until the mixture is completely smooth and creamy.
  4. Adjust and Season: Season the soup with salt and pepper to your taste. If the soup is too thick for your liking, add a little more cold water, a tablespoon at a time, and blitz again until you reach the desired consistency.
  5. Chill Thoroughly: For the best flavor and a truly refreshing experience, pour the soup into a container and chill in the refrigerator for at least one hour.
  6. Serve and Garnish: Ladle the chilled soup into bowls. Top each serving with a generous spoonful of the marinated feta and a sprinkle of toasted seeds before serving immediately.
