Ingredients

For the Honey-Almond Granola (makes about 4 cups):

  • 2 cups old-fashioned rolled oats
  • 1/2 cup sliced almonds
  • 1/4 cup unsweetened coconut flakes
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

For Assembling the Trifles (4 servings):

  • 2 cups plain or vanilla Greek yogurt
  • 2 cups mixed fresh berries (like strawberries, blueberries, and raspberries)
  • 1 1/2 cups prepared Honey-Almond Granola

Instructions

  1. Prepare the Granola: Preheat your oven to 325°F (165°C). Line a large, rimmed baking sheet with parchment paper.
  2. In a large bowl, stir together the rolled oats, sliced almonds, coconut flakes, cinnamon, and salt until well combined.
  3. In a separate small bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract.
  4. Pour the wet ingredients over the dry oat mixture and stir thoroughly until every oat is lightly coated.
  5. Bake the Granola: Spread the granola mixture in an even layer on the prepared baking sheet.
  6. Raw granola mixture spread evenly on a baking sheet before baking

  7. Bake for 20-25 minutes, stirring halfway through, until it’s golden brown and fragrant. Keep a close eye on it, as it can brown quickly.
  8. Remove from the oven and let the granola cool completely on the baking sheet. It will become crispier as it cools. Store any leftover granola in an airtight container at room temperature for up to 2 weeks.
  9. Assemble the Trifles: Grab four glasses or jars. Create layers by spooning in Greek yogurt, followed by a sprinkle of mixed berries, and then a layer of the cooled granola.
  10. Repeat the layers until the glasses are full, finishing with a final topping of berries and a sprinkle of granola.
  11. Serve immediately for the best crunch, or cover and refrigerate for up to 2 days for a perfect grab-and-go breakfast. Note that the granola will soften slightly when stored with yogurt.
