Ingredients
- 1 lb (450g) penne or rigatoni pasta
- 1 tbsp olive oil

- 1/2 tsp red pepper flakes (optional, for a little heat)

- 1 1/2 cups shredded mozzarella cheese

Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Cook the pasta in a large pot of salted boiling water according to package directions, but undercook it by 2 minutes so it is very al dente. Drain and set aside.
- While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
