  • 100g (1/2 cup) icing sugar
  • 250g (1 cup) smooth Biscoff spread
  • 1 tsp vanilla extract
  • 250ml (1 cup) double cream or heavy whipping cream, cold

  • 2 tbsp Biscoff spread, melted
  • A handful of Biscoff biscuits, crushed

Instructions

  1. Prepare the Crust: Place the Biscoff biscuits in a food processor and blitz into fine crumbs. Alternatively, place them in a sealed bag and crush them with a rolling pin. Transfer the crumbs to a bowl and pour in the melted butter. Mix until fully combined, resembling wet sand.
