Ingredients
- 1 cup red lentils (masoor dal), rinsed well
- 1 medium beetroot (about 1 cup), peeled and grated
- 1 tbsp olive oil or ghee
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp ground coriander
- 4 cups vegetable broth or water
- Juice of half a lemon
- Salt and freshly ground black pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the olive oil or ghee in a large pot or Dutch oven over medium heat. Add the cumin seeds and cook until they begin to sizzle and release their aroma, about 30 seconds.
- Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the turmeric powder and ground coriander, stirring constantly for 30 seconds to toast the spices.
- Add the rinsed red lentils, grated beetroot, and vegetable broth. Stir everything together and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the lentils are soft and have broken down completely. Stir occasionally to prevent sticking at the bottom.
- Remove from the heat. Stir in the fresh lemon juice and season generously with salt and pepper to your taste.
