Ingredients

  • 1.5 lbs (about 680g) boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for slurry)
  • For Garnish: Toasted sesame seeds and sliced green onions

Instructions

  1. Prepare the Sauce: In a medium bowl, whisk together the soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper until well combined.
  2. Combine in Slow Cooker: Arrange the chicken thighs in a single layer at the bottom of your slow cooker. Pour the prepared sauce evenly over the chicken, ensuring each piece is coated.
  3. Cook: Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and cooked through. Avoid opening the lid during cooking to maintain a consistent temperature.
  4. Chicken thighs simmering in the dark, savory sauce inside the slow cooker.

  5. Thicken the Sauce: Carefully remove the cooked chicken from the slow cooker and set it aside on a plate. In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry. Pour the slurry into the sauce remaining in the slow cooker and whisk to combine.
  6. Finalize: Turn the slow cooker to HIGH (if it isn’t already), cover, and let the sauce cook for another 15-20 minutes, or until it has thickened to a glaze-like consistency.
  7. Serve: Return the chicken to the slow cooker and gently toss to coat each piece in the thickened sticky sauce. Serve immediately, garnished with a sprinkle of toasted sesame seeds and fresh green onions.
