Speedy Pesto-Crumbed Fish with Crispy Wedges & Charred Broccoli

Ingredients

  • 2 medium potatoes (about 400g), scrubbed and cut into wedges
  • 3 tbsp olive oil, divided
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper
  • 1 head of broccoli (about 300g), cut into florets
  • 2 white fish fillets (such as cod or haddock, about 150g each)
  • 2 tbsp green pesto
  • 4 tbsp panko breadcrumbs
  • 1 lemon, cut into wedges for serving

Instructions

  1. Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.
  2. In a medium bowl, toss the potato wedges with 1.5 tablespoons of olive oil, the garlic powder, a generous pinch of salt, and pepper. Spread them in a single layer on one side of the prepared baking sheet. Bake for 15 minutes to give them a head start.
  3. While the potatoes are baking, toss the broccoli florets in the same bowl with 1 tablespoon of olive oil, salt, and pepper.
  4. Pat the fish fillets dry with a paper towel and season both sides with salt and pepper. Spread 1 tablespoon of pesto evenly over the top of each fillet. In a small bowl, mix the panko breadcrumbs with the remaining 0.5 tablespoon of olive oil and a pinch of salt. Press this mixture firmly onto the pesto-coated fish.
  5. After 15 minutes, carefully remove the baking sheet from the oven. Add the broccoli florets to the empty side of the sheet. Place the prepared fish fillets next to the vegetables.
  6. Return the baking sheet to the oven and bake for another 12-15 minutes, or until the fish is cooked through and flakes easily, the breadcrumbs are golden, and the broccoli is tender with charred, crispy edges.
  7. Serve immediately, providing fresh lemon wedges on the side for squeezing over the fish and broccoli. Enjoy this simple yet elegant meal!
